Easter Sunday Pot Roast
Despite the fact that Mike and I (and Blue and Lion) have been a family for about four Easters now. (Okay only two Easters for Lion), we still don't have any really Easter traditions in place. In fact I think the past four Easters we've done something different.
So I thought for this year, especially now that Blu is 3 and a half and kind of gets what Easter is about, that we should start some Easter traditions. And really that means setting up an Easter dinner tradition. I know that the common dinner for Easter is ham, but I'm not really much of a ham fan (or most pork products for that matter). Instead for me, Easter represents the end of winter and the beginning of spring. And when I think of a meal to end winter with, I often think of pot roast. Its similar to beef stew, which I guess if you live up north you could eat a long over winter. (Its hearty and hot, what's not to love all winter long?) And I just love that in pot roast you can use up your winter veggies that you still have stashed around. (Carrots, potatoes, and other root veggies). So instead of ham, I decided that a pot roast would be the perfect dinner for our Easter dinner (for this year and for year's to come)

Last year I made this recipe as is, but this year I wanted to try something different. So I halved the amount of roast the recipe calls for (I used about 1lb) and decided to add more veggies to the mix. So I added in celery sticks and sweet potatoes and because I'm not a huge fan of onions, I only threw in a half of one.
Once I had everything chopped up I threw it all into the crock pot and covered with some brown gravy.
And after 8 long hours, the pot roast was ready!
I made the mistake of adding more liquid in it than I should have. (I only used one packet of Brown Gravy and it didn't look like enough liquid so I added an extra cup of water in to the mix.) So it ended up a little liquidy on the plate.
It didn't matter though Lion still loved it!
And its safe to say that I'll be making this for many Easters to come!
