Doctoring Up Box Cake Mix
So last week Blue turned 4 and I was happy that I finally made him a birthday cake. And well I meant to actually make it all from scratch, but I never actually got around to looking for a cake recipe. And then Blue decided he wanted a chocolate cake for his birthday, so I just decided to take the easy way out and ended up buying a box mix for Devil's Food Cake.
However I wasn't content with just making a box cake. There's nothing wrong with using just a box cake, but I just wanted to do more. Luckily I remember seeing on Pinterest a tip for how to doctor a cake to make it taste like a bakery cake. And, boy, were there a lot more tips than I thought there were. So I decided that this would probably have to be a multi part project. And unfortunately since Blue's birthday cake was up first he got the "lightweight" doctoring.

Box Cake Mix
Eggs
Butter
Milk
Optional: Sand Castle Bundt Cake Pan
Optional: Stand Mixer
Results
So I love this box cake mix doctoring. Its so easy to do. I simply melted two sticks of butter and added it to my cake mix.
I then threw in 5 eggs instead of the suggested 3 on the box. And since I couldn't find a pint on regular whole milk, I just decided to use chocolate instead.
I then just let my mixer do its thing!
And in case you were wondering, I've finally named my blender. His name is Caesar.
I carefully poured the mixture into my Bundt pan and then forgot about it for 40 minutes!
And here is how it turned out:
I know the top is a little white. I totally forgot to get non stick spray for my pan. So I tried to butter and flour it. And well I didn't get all the excess flour off like I should have. The upside is that my cake slide right out!
So obviously we had to decorate is for Blue's birthday. So my mom bought some seahorse truffles to put around the outside. And I used my "bonus cake" (I had a slight spill over cake batter that ended up cooking on the cookie sheet.) to make it look like Blue had one big mud castle.
And of course we had to top it with a big 4 candle.
And as for my big guy:
Its safe to say that he loved it! (He kept calling it his birthday castle! And telling me how he wanted to eat the door!)
As for how it tasted... I'm not sure that I really noticed a difference between this and a regular box mix. Mike thought it was a little dry. So I guess I'll just have to try another method when it comes to Lion's birthday cake!
