Crock Pot Irish Cream Hot Chocolate
I thought I had found the perfect drink to celebrate St. Patrick's day months ago. You see I was doing my morning peruse of Instagram, when I stumbled across a post from Crock Pot about slow cooker Irish coffee to celebrate National Irish Coffee day. (This is apparently January 25th. It seems like a weird date to me, but I guess that's why I didn't get any choice in the matter.) I really thought it would be better for St. Patrick's Day than the middle of January. So I made a mental note about it and went about my business.
And then earlier this week I finally tried to go back and get the recipe from crock pot to find that it was no longer listed on their instagram! I was disappointed to say the least (and still a little confused as to where it went. Or if it ever existed at all!) So I quickly licked my wounds and turned to Pinterest to find the proper drink for St. Patrick's day. And sure enough I didn't find exactly what I was looking for, but I still found a pretty kick ass version of it!
(And I'll be scooping out Instagram next January to see if Crock Pot posts the recipe again, so I can grab steal it before they delete it again!)

All right I'll confess. I didn't use Ghirardelli baking squares for my hot chocolate. Instead I used target brand chocolate morsels (which apparently is the proper name for chocolate chips! Who knew they weren't just called chocolate chips? Not me!). So I just measured out one cup of chocolate morsels to replace the 8 oz of baking squares.
As you can see above, it just about covered the the bottom of my crock pot! So many chocolate chips! (And yes Blue and I sampled a couple of them to make sure they were still good!) Next I poured in the heavy cream, milk, hot chocolate mix, and vanilla in and then gave it a quick mix. I just used regular hot chocolate mix and not unsweetened mix. So I didn't add any extra sugar to the mix.
And then Blue had to check it out and also give it a quick mix.
And yes I'm well aware that the crock pit says it has BBQ chicken in it. I made that earlier in the day and just didn't feel like switching the writing over.
After Blue's quick mix, he turned on the crock pot and then we went to do other things. (Probably watch Paw Patrol or play with Legos... I can't remember, but we probably did both). And by the first time I went to stir it, I had put Lion down for the night and Blue had passed out on the couch. (This actually worked out perfect for me because I didn't have to share any hot chocolate with Blue and I could just mix the Bailey's in without feeling guilty that Blue couldn't have anymore than one cup.)
The best part is it only takes 1.5 hours to make! (It may seem like a long time, but considering most cooks take about 4-6 hours, 1.5 feels like victory!). And then I just poured in the Bailey's and I was good to go. I topped mine with a lot of mini marshmallows!
And then since I had the tv and sometime to myself for the night. I drank my Irish Hot Chocolate, enjoyed an episode (or two!) of the Man in the High Castle, and scrolled through Pinterest, looking for fun project ideas to try!
All in all, this Irish hot chocolate was a great way to end my St. Patrick's day, but it could just as easily be enjoyed on a cold or even just a chilly night!
(The only addition I would like is to make it a little minty. And then it would feel even more like an Irish Hot Chocolate).
