My Second Attempt At Doctoring Box Cake Mix
Over this past weekend my little Lion cub turned 2. And since I made Blue's birthday cake, I knew I had to make Lion's birthday cake as well. And naturally I also took that time to also try out more box cake doctoring techniques. And this time, I decided to use the advance version of doctoring a cake.
The Remake
Trying Another Way to Doctor Box Cake Mix
Instructions from Together as Family
Supplies Needed:
Box Cake Mix
Eggs
Vegetable Oil
Sour Cream
Milk
Vanilla
Instant Pudding
Baking Spray
Basic Baking Supplies (Whisk or Stand Mixer, Oven, Cake Pan, Spatula, and etc.)
Optional: Castle Bundt Pan
Results
Since Lion is still too little to tell me what kind of cake he likes, I had to decide for him. So I decided to make him a funetti birthday cake. (I actually tried really hard to get Blue to pick funfetti for his birthday as well, but he was firm in his decision for a chocolate cake.
Anyway I mixed all of the ingriedents together and since my cake mix was slightly under the size of box mixes recommended, I just cooked it all in one cake pan.
When I pulled it out of the oven it looked like that was a mistake and that my cake had really expanded out of the cake form.
But after it cooled it settled back down into the cake pan,
In fact the only problem I had was that one side of my cake didn't quite cook enough, but I let it cool anyway. (That was a major mistake... so next time I guess I need to put my cake pan in better!)

As you can see I'm still learning how to bake in that cake pan, but it didn't stop Lion from stealing pieces from the corner!
Luckily we distracted him with some pool time and the cake was still (mostly) intact when it came for cake time!
And all of that doctoring paid off. The cake tasted better than it looked!
I guess next year I'll be making all these cakes from scratch.
