Cast Iron Skillet Fajita Chicken

While I was making the crochet skillet handle covers, I realized that it was one thing to make them, but it was another to really see if they work. I'm not used to cooking, let alone in a cast iron skillet, so I turned to Pinterest to find a recipe to cook in it. There are a lot of cast iron skillet recipes. There are recipes all the way from breakfast to dessert and everything in between. Eventually I was able to sort through them and find a recipe that was easy enough that I could handle.

The Recipe

Cast Iron Skillet Fajita Chicken

Supplies Needed:

  • Cast Iron Skillet

  • 1 pound Chicken Breasts

  • 2 Bell Peppers

  • 1 Yellow Onion

  • Cilantro

  • Olive Oil

  • Dried Oregano

  • Chili Powder

  • Kosher Salt

  • Ground Cumin

  • Garlic Powder

  • 1/2 Lime

  • Optional: Hot Sauce

Results

The hardest part of the recipe was cutting up the vegetables. This is because I took my time and made sure I didn't cut myself and because Lion loves bell peppers, so while I was cutting I had to continuously try to shoo him away. (I eventually just kept giving him pieces of bell peppers... which worked, but only for a few minutes at a time!)

When it came to finally cooking everything on the stove, Mike finally got Lion away from me. Blue, however, stayed with me and helped me cook.

He did stand back from the stove because of all the smoke coming off of the food and because I kept telling him how hot everything was. Naturally I didn't think about all the smoke this would cause and forgot to put on the fan before I started.

I actually love how easy the whole recipe was to cook. Before I knew it my vegetables were brown and it was time to cook the chicken!

This took a little more effort on my part. I had more chicken than was recommend, so I had to really work at making sure it all cooked through. After I was sure it was fully cooked, I excitedly added the vegetables and began setting up the tortillas for dinner.

i completely forgot about adding the lime juice until I started writing this post!

Even without the lime juice it still made a delicious chicken and veggie mixture for our fajitas!

And of course I gave it to the official food taster...

And he loved it so much, he had to help me finish mine!
