Crock Pot Pumpkin Cookin'
Last year I did a whole series on pumpkins and the different ways I was using them last Thanksgiving. This year I decided to continue that trend, albeit a little differently. Last year I briefly wrote about cooking pumpkins in the crock pot in my post about pumpkin pie. This year, I decided it deserved its very own post. (Because I used that pumpkin puree for more than just my pumpkin pie).
So without further ado here is to cook pumpkins in a crock pot!

The best part of cooking your own pumpkins is using the knife to break them apart. Pie pumpkins are thicker than normal pumpkins, so you can get out any pent up frustrations breaking them in half.
The worst part of cooking pumpkins is scooping out all the seeds and guts. I found the easiest way to get the seeds out is to get the majority out with my hands and then I used my metal spoon to scoop out the rest.
Next year I'm going to get that pumpkin scraper and make the whole experience easier.
After that all I had to do is put my halves into my crock pot and let them cook.
Its actually a lot faster to roast them in the oven, but I just really love my crock pot and I'll use any excuse I can to use it!
The pumpkin I cooked this year was thicker than the pumpkin I cooked last year, so it took close to three hours for it to finally be tender enough to use.
Once my pumpkin halves were cool enough to handle, I used my metal spoon and scrapped out all the pumpkin flesh.
And now I have enough pumpkin purree for my pumpkin pies
