Testing Out Cooking BBQ Chicken in a Crock Pot

A couple weeks ago I wrote about Crock Pot Irish Cream Hot Chocolate and if you will recall in my cover picture for that post, my crock pot was labeled for BBQ Chicken. And yes the truth is that I did originally make this recipe back in March, but I didn't get to finish it.

You see I started this recipe and then I went to work for the day. I left Mike in charge of finishing it. And well, he took the chicken out and tried it like he was supposed to, but I thought I made it clear that he should shred the chicken once it was done cooking. I didn't. And instead of coming home to shredded chicken, I came home to BBQ chicken breasts. Needless to say I was disappointed. And I knew I had to try it again when I could actually be in charge of it from start to finish.

The Recipe

Normally I half every recipe I find on Pinterest, but for some reason for this one I decided to make it as is. The downside is that my I had to double layer my chicken in the Crock Pot.

(And that was the moment when I realized I should have halved the recipe, but I kept going to see if it would still work.)

Next up was to combine the wet ingredients! For this recipe I used Sweet Baby Ray's Barbecue Sauce and because I didn't read the ingredients list right, regular house Italian (and not zesty like the recipe calls for).

This was beyond simple and I love that I was able to get it all mixed together with minimal help from Blue and Lion. (Or Blue insisting it was his turn to mix it... which really means nothing gets mixed and a whole lot ends up on the floor!)

Once I had it thoroughly mixed together, I easily poured it over the double layered chicken and I set the crock pot on low because I wasn't quite sure how long we were going to out for.

And before I knew it, I had shredded BBQ Chicken in my crock pot!

I decided to serve my BBQ chicken on a potato bun along with some potato puffs. (I know I should have gone with fries or some vegetables, but I ran to the store too late and didn't have time to prep that too!). And I was going to top it off with some cheese (pepper jack, to be precise), but apparently that got eaten while I was at work!

And I always know if the recipe is good if Lion eats it.

Which he did after he finished his potato puffs.

And overall I enjoyed the chicken. There were a couple of weird tasting spots. I'm not sure if that was because the chicken wasn't completely covered in the cooking process or if it happened because the crock pot was on low.

All in all it made for a delicious family dinner. That I'll probably make again in the future!
