Pumpkin Pancakes

Last year I ended my pumpkin overload series with a post all about pumpkin pancakes. The truth of the matter is that, that post was more of an after thought post and I just needed a recipe to use up my spare pumpkin puree with. This year I decided to take a little more time and find a really great pumpkin pancake recipe (and also make sure that I had enough pumpkin puree to make two pies and a batch of pumpkin pancakes... or two!)

The BEST Pumpkin Pancakes

Recipe From Cooking Classy

Supplies Needed:

  • Electric Griddle

  • Pumpkin Puree

  • Basic Baking Supplies and Spices (See recipe for full ingredient list)

Results:

Out of all the pancake batters I've made over the past couple of years, this one has got to be the thickest I've mixed.

I guess it was a good thing it was so thick because it lead to some of my biggest and fluffiest pancakes I've made yet!

I love in Cooking Classy's post about the pumpkin pancakes the pancakes are really orange look really pumpkinny. My pancakes, however, turned out to be more of a brown color. Almost like I made whole wheat pancakes instead of pumpkin pancakes.

The really fun part was that i was able to trick Blue into trying them before I told him that were pumpkin pancakes and he instantly didn't like them anymore.

Lion on the other hand loves the pancakes!
