Cooking Chili and Cornbread in a Skillet

I'm not sure how 2018 is treating you so far, but around here its been a chilly sunless couple of days. While I'm not thrilled with this weather, I'm slightly happy because it gives me the perfect reason to try out another chili recipe. (Because can you ever try enough chili recipe?)

For my chili, I actually decided to use ground turkey. (I'm trying to give up a lot of red meat this year and this is the perfect recipe to start with!).

It quickly browned and I mixed all the canned ingredients together. At this point my skillet was full and I wasn't quite sure how I was going to fit the cornbread on top.

Luckily Lion couldn't wait to try it and brought me a plate and spoon. I gave him a little bit and it knocked down just enough that I figured I could fit the cornbread on top.

Then I placed it in the over and let it cook.

Here is how it turned out:

It was actually really tasty. Lion actually loved it so much he came back to get more of the final product.

Next time I plan to make it a tad bit spicier. Overall it was the perfect meal for these cold winter days.
